Congrats on the Notion launch! I have an app that uses Airtable as my core data source for users and other structured data, but I would like to explore using Notion as a CMS for some of the content pages I would like to add to my app. Is it possible to have an app connected to multiple data sources simultaneously (only use 1 of them for user data, obviously) and choose between the data sources at the block level?

Yes this is possible, within the limit of 1 datasource per block. Except this (which is normal) you can add as many datasources per page, per app.
Also, careful => Notion is a datasource for Softr only for Notion data structured as a database (Notion table blocks, Notion list blocks, Notion Kanban blocks etc.) => not for simple text block or any other content-type blocks (for now).
Just test it and you will see all you can do and if it’s a go or a no-go for you.
Thanks @matthieu_chateau, that’s very good to know regarding multiple data sources per app. In my opinion, Notion is a much better CMS than Airtable but Airtable is a much better database than Notion. So in the future it would definitely be nice to be able to use Notion to control content pages in a Softr app (e.g., a blog) rather than just having Notion be a substitute for things that Airtable already does better (for those who know how to use both ).
