What’s the best template to use on a journey to create a help docs solution similar to that used by softr?

Hi @shotleybuilder we did not create our help doc page with Softr. 
but we used https://www.helpkit.so/
What you can do is adding Footer just like we have in Softr and add Help doc page link so that it redirects to external url(your helpfkit page)
or you can use our Header block with vertical orientation and by clicking on each link it will open the corresponding page.

Another option you can try regarding help docs, is gitbook.com (Which i believe was also been used by softr in the past).
You can checkout how it blends with my softr app by checking the help link on the main menu:
